The Moringa oleifera, in English it is called the Miracle tree. It is called a miracle tree because almost all parts of this tropical tree are edible and/or have medicinal values.
The Moringa tree can grow up to about 12 meters high in its natural environment in Africa and parts of Asia. The Moringa tree can grow several meters per year and can survive droughts for of years.
The leafs of the tree are the most used and are, both raw and cooked edible. The leafs contain incredibly high doses of vitamins, minerals and proteins. For longer shelf life, the leaf can be dried and in this state it loses virtually no nutrients. The dried leafs are used for tea and grinded for moringa powder.
In the Northern Hemisphere, Moringa leaf powder is becoming more popular. The Moringa leaf powder is a superfood because of its medicinal and nutricional values. Whereas, in the tropical regions this tree has been included in everyday food for thousands of years in the western world it is just getting known and appreciated.

Moringa leaf is harvested regularly so that fresh green leaves are harvested. These are then washed and dried as quickly as possible in a warm dark place. For tea, the dried leaves are finely chopped. However, most of it is ground into powder, after which it can be easily stored or processed. A big advantage for poor countries like Uganda is that the pulp left over after pressing the oil acts as a water purifier, just a handful of pulp in a tank full of dirty water purifies the water in seconds to about 95%.
Also the flowers of the Moringa are edible, they have a honeyed taste and are used to make aromatic tea together with the leafs.
On the tree come up to 60cm long beans in which the seeds are located. If you harvest the beans at an early stage, so the pods, they are edible and can be incorporated into dishes. The beans have a meaty structure and also contain a lot of nutritional values.
The bark and roots of the Moringa are also used in ayurvedic medicine to heal all kinds of ailments.
